In “Dinner in Caracas” these female culinary leaders, will revive four of their favorite dishes, from traditional colonial “Mantuana” food recipes, to classic Venezuelan favorites. Both Chefs will evoke the colors, aromas, flavors and textures of their upbringing and culture yet utilizing seasonal and local ingredients, and giving each dish their own modernistic staple. As a result, they will strive to maintain their homeland traditions alive and consequently bring to each diner the possibility of enjoying dishes imprinted in their taste memory. Like in Danish film Babette’s Feast, to bring a mood where “old wrongs are forgotten, ancient loves are rekindled, and a mystical redemption of the human spirit settles over the table”

A portion of the proceeds will be donated to "Fundación Comparte por una vida", a non-for-profit organization currently helping Children Hospitals in Venezuela by sending basic needs like formula, dippers and baby bottles to their children. ABOUT CHEF CLARISA
PENZINI: Born in Caracas, Venezuela. Graduated at The International Culinary Center (former French Culinary Institute) in New York City, Clarisa Penzini dedicated her career to the Pastry Arts, running her private wedding cake business and pastry shop “Canela Dulce y Salado” for almost ten years in Caracas.Moving back to New York in 2010 she started a private catering company and in 2013 opened up, in partnership with her husband Ricardo Picón, "The Sandwich Shop"Restaurant operating in Williamsburg, Brooklyn . She is also a published author with three cooking books by Ediciones B, Cocina Sana (2008), Postres Sencillamente Modernos (2008) and Cocinar y Celebrar (2012).
"For this dinner, I pay tribute to my culture, to the country were I was born and raised. Venezuela, filled with contrasts, mixtures, and a richness in flavors originated from the cultural multiplicity that founded us, that constructed us as a nation.
"My proposal is mainly a “menú Caraqueño” where sweet and salty flavors co-exists freely in the same dish, with typical indigenous, African and European ingredients. Elaborated from a rather classical perspective, the dishes I chose for this occasion are more related to family gatherings that take place around the table in Caracas. These dishes range from a Colonial period to the 60’s and 70’s. I here propose an act of memory, in which each dish strives to evoke and reconstruct a piece of our culture", Chef Clarisa Penzini

Born in Caracas Venezuela, Executive Chef Maria Laura Quintero started her culinary career under Chef Helena Ibarra’s mentorship. Chef Maria Laura obtained her Culinary Arts Diploma at The Institute of Culinary Education of New York and is a Certified Health Coach from The Institute of Integrative Nutrition of New York. Upon moving to Armenia, New York in 2009, she started a private catering business, providing fresh vegetables and fruit from her own organic vegetable garden. In 2013, her passion to continue sharing well-made, sustainable food led to the creation of MuchaChula Boutique Catering with long-time friend and business partner Florencia Minniti
